Cashew Butter

Cooking time 10-15mins Blending time 5-10mins


Cashews (Natural) (250g of nuts will give you 250mls of butter)
1/4 teaspoon of salt or to taste


  1. Heat oven to 180C.
  2. Spread nuts evenly on an oven tray and place in the heated oven.
  3. Roast for 10 – 15mins, turning the nuts over after 5mins.  Keep an eye on the nuts as they can burn quickly.
  4. Place roasted nuts (and salt if you want to add) in a blender/food processor and blend until the nuts turn into a smooth paste. Approximately 5 – 10mins.
  5. Store the cashew butter in an air tight container in the fridge for up to 3 weeks.

Enjoy on toast, use it as a dip or even a base to a dip. If you find that the texture is too thick for your liking you can always add a little canola or peanut oil to the roasted nuts when you blend them.
