Coleslaw

Ingredients

  • ¼  small red cabbage, core removed, finely shredded
  • 200g snow peas, trimmed, finely sliced lengthways
  • 2 medium carrots, julienned
  • 1 sml red onion, finely sliced
  • ¼ cup mint leaves, shredded
  • ¼ cup coriander leaves, chopped
  • 1 tsp sesame seeds, toasted

Dressing

  • ¼  cup sour cream
  • 1/3 cup lemon juice
  • 3 tsp grated ginger
  • 1 tsp sesame seeds, toasted
  • Sea salt & freshly ground pepper

Preparation 

  1. Combine cabbage, snow peas, carrot, onion and herbs in a large bowl.
  2. Dressing: combine all ingredients in a small mixing bowl and whisk to combine.
  3. Just prior to serving, pour dressing over cabbage mixture and toss until combined.  Sprinkle over toasted sesame seeds.
