Deb’s Zucchini Fingers

Deb's Zucchini Fingers


  • 3 zucchinis, grated
  • 1 carrot, grated
  • 1 cup self-raising flour
  • 3 bacon rashers, diced
  • 6 eggs, lightly beaten
  • 1½ cups grated cheese
  • 1 large onion, finely diced
  • Salt and pepper to taste


  1. Add all ingredients to the one bowl and mix.
  2. Pour into a well-greased 16cm x 26cm lamington tin and bake at 180C until browned (about half an hour).
  3. Slice into fingers when cool enough to touch.
  4. Serve hot or cold with dinner, lunch or even for afternoon tea
