- 3 zucchinis, grated
- 1 carrot, grated
- 1 cup self-raising flour
- 3 bacon rashers, diced
- 6 eggs, lightly beaten
- 1½ cups grated cheese
- 1 large onion, finely diced
- Salt and pepper to taste
- Add all ingredients to the one bowl and mix.
- Pour into a well-greased 16cm x 26cm lamington tin and bake at 180C until browned (about half an hour).
- Slice into fingers when cool enough to touch.
- Serve hot or cold with dinner, lunch or even for afternoon tea
