- 1 huge zucchini (or two normal size)
- 1 capsicum (green or red can be used)
- 3 brown onions
- Half a head of cabbage
- 2 carrots (nice large fat ones)
- 4 potatoes
- 2 litres of Vegetable stock
- Salt and heaps of pepper
Chop (roughly but small) all ingredients and place into large saucepan. Add vegetable stock and salt and pepper.
Cook on medium heat till pumpkin and potatoes are tender (you can put a fork through them) place in blender or whiz with a bar mix.
You’re done and ready to eat. Just as well it makes heaps because it is very yummy.
