Muesli Bars – only 3 ingredients

Muesli Bar Soft

These bars are soft once cooked so are perfect for those who like the softer style of muesli bar.

1/2 cup almond butter (or cashew butter)
1 cup mashed banana (approximately 2 bananas)
400g Muesli (natural with added dried fruit)

If you want to up the yummy goodness of these bars there is a fourth ingredient you can add:

2 tablespoons pepitas


Preheat oven to 170C. Line a lamington tin with baking paper.

  1. In a small pot heat the almond butter and mashed bananas stirring gently until well combined.
  2. Place muesli (and pepitas) in a mixing bowl and fold in almond butter mixture.
  3. Press the batter into the lined tin.
  4. Bake for 20-25mins. Let it cool before cutting it into bars/squares.

This should make 12 bars – enough for everyone’s lunchbox or for a breakfast on the run.
