4 pitted Medjool dates
1/2 cup pepitas (pumpkin seeds)
1/2 cup sunflower seeds
1/4 cup craisins (dried cranberries)
1 tablespoon desiccated coconut
1 tablespoon cacao
1 tablespoon water (can use coconut water if preferred)
1/4 cup pepitas (pumpkin seeds)
1/4 cup desiccated coconut
2 tablespoons Acai powder
In a food processor blitz the pitted dates, pepitas, sunflower seeds and crasins until finely chopped.
Add the coconut, cacao and half the water. Blitz until it all comes together. If it is still not binding add some more water until it binds.
Roll the mixture into small balls and roll in either the pepita dust or the extra coconut or the acai powder.
Place in an airtight container and transfer to the fridge.
Place the pepitas in a small food processor and blitz until it resembles fine crumbs.
