1 ripe banana
2 tablespoons coconut oil
4 tablespoons cashew (or almond) butter
1 teaspoon cinnamon
1 teaspoon nutmeg
100g sunflower seeds
2 tablespoons chia seeds
Add the banana, coconut oil, cashew butter, salt, cinnamon and nutmeg to a food processor and blend until you have a paste.
Add the rest of the ingredients and pulse a few times to mix in all the seeds.
Line a lamington tray with baking paper and press the mixture in.
Put in the freezer for one hour. Remove from freezer, cut into bars and transfer to the fridge.
Bars will last for up to a week in the fridge.
Enjoy these as a nutrient rich energy boost in the afternoon – or just whenever you feel a little low on energy.
