- 2 bay leaves
- 1 large onion, sliced
- 3 strips of orange peel (optional)
- 4 whole cloves
- 2 litres water
- 2-2.5kg corned beef
Place bay leaves, onion, orange peel, cloves and water in slow cooker and mix. Add corned beef with fat side facing upwards. Cover and cook on low for 10-12hrs or high for 5-6hrs, until tender. Remove meat from the liquid and slice to serve.
Serve with lots of roast vegies.
OR serve with the shredded or chopped meat stirred through a vegetable soup OR make some corn and beef fritters.
